Hi,
eco doesn't have interface support, so
just use custom(hand-made) code for it.
person.cs -- here you can introduce and implement new interface you need.
person.eco.cs

ECO generates partial classes, just add the interface definition to the end of the class definition in the code editor. You can't model interfaces though.
